Broccoli & Mushroom Noodles

  • ¼ cup Olive Oil
  • 1 bulb Garlic
  • 1 inch Ginger
  • 1 Jalapeño
  • 2 Tomatoes
  • 1 Broccoli (Fresh)
  • 1 package Frozen Mushrooms
  • Salt
  • Black pepper (coarsely ground)
  • Rice Noodle (cooked)


  • Cut the garlic, ginger, tomatoes, jalapeño, and broccoli. Set aside.
  • Cook the rice noodles

  • Fry the garlic and ginger in olive oil. Add the mushrooms and let it boil. Add the vegetables, cover on the pan and let boil until vegetables are tender, but broccoli still crispy.

  • Place your vegetables on a plate.
  • Add the rice noodles on top.
