Home Cooking: Oven-baked Zucchini and Tomatoes

Sometimes you’re at home and you just do not know what to cook.
I started gathering ingredients I had in my fridge and pantry: zucchini, tomatoes, cayenne pepper, basil leaves, nutmeg, cinnamon, sea salt, oil, margarine and black pepper.
I washed the zucchini and the tomatoes, sliced them. Marinated them in sea salt and oil.  Than melted the margarine in the microwave, so I could grease the foil dish.
I placed the slices of zucchini and tomato one after the other to fill up the dish. Sprinkled some cayenne pepper, basil leaves, nutmeg, cinnamon, sea salt and black pepper on top. Placed it in the oven for about 15 to 20 minutes.
The end result of this dish for me, was a very simple ‘YUM’… Ovenbaked zucchini and tomatoes; no rice, no meat, only veggies!
This dish is a good replacement for when you do not want to eat a salad. 🙂
I loved it, it was amazing and now I am stuffed!
