Home Cooking: Witlof and broccoli – a Dutch oven dish

I was in the mood again to cook me something odd and foreign to my country. I don’t know if you’ve know it yet, but Suriname was a colony from the Netherlands. Therefore some of the dishes we know come from that country, but still not a lot of our people know all the products used or the dishes made.

On my vacation to Europe last month, the wife of my cousin made a dish that I’ve never tried before. The vegetables’ name is Witlof. And she made it with cheese and ham, potatoes and fried onions (known to Suriname as an add on to our Saoto soup).

I had to try it myself. Of course I didn’t have or use all of the ingredients the right way (her way), but I did add my touch to it. I do hope you like what you see and try it yourself.

Sliced potatoes

Slices of ham

Broccoli

Parsley flakes

Basil flakes

Cayenne pepper

Shredded mozzarella cheese

Shredded Italian mix cheeses

Béchamel sauce – I usually just buy it, instead of making it myself.
Easier and faster why. Lol

The dish!

Well… My honest opinion, I could have done better. I should have left it in the oven a bit longer. The potatoes were done, but the vegetable wasn’t soft yet. It still had crunch, that was good too if you like it. I prefer it a bit softer, soooo…. I did put it back into the oven for about 20min.

Nice experience… I think I might have to ask my cousins wife for her recipe the next time. Never the less, the dish was still good. Not as delicious as I hope it would have been at the first bite. I must say that the cayenne pepper did add a bit of spice to it. I did love that. Maybe I should try that more often… What do you think?
