1. Where did you learn to cook?
I learned to cook from my mom. In 2007 I enrolled in a local culinary school where I completed a course that mainly focused on the French cuisine. My interest for the culinary art started to grow more and more. I always liked baking more than I liked cooking though. 


Waar heb je leren koken?

Koken heb ik van huis uit geleerd. Mijn moeder was degene die altijd kookte.
In 2007 ging ik naar de horecaschool en daar heb ik een koksopleiding gevolgd met de focus op de franse keuken. Hier werd mijn interesse groter naar andere keukens. Ik had altijd al interesse voor bakken, Mijn liefde en passie liggen dus meer bij het bakken dan het koken uiteindelijk.


2. How many years have you been cooking?
I’ve been cooking since I’ve started living on my own.
When I was 10 I started baking. My first recipe was for “maizena cookies” . The first recipe was heavenly perfection! The second time didn’t go so well… I didn’t have enough cornstarch so I used mainly flour and a bit of maizena. Not to be repeated!

Hoeveel jaren kook je al?
Koken doe ik al vanaf ik zelfstandig ben.
Bakken doe ik al vanaf mijn tiende. Mijn eerste recept was maizena koekjes. De eerste keer waren mijn koekjes fantastisch! De tweede keer ging het een beetje mis! Ik had niet voldoende maizena dus ik heb blom gebruikt, met een beetje maizena….Het resultaat kan je raden: niet voor herhaling vatbaar!



3. With which ingredient do you prefer to work with?
It’s difficult to choose just one favorite ingredient. Obviously sugar should be on the list: I’m a pastry chef. But chocolate and fruit should always be on hand in my kitchen. 

Met welk ingrediënt werk je het liefst?
Het is moeilijk om 1 favoriet te kiezen. Vanzelfsprekend suiker natuurlijk: ik ben een pastry chef . Maar chocolade en fruit mogen zeker niet missen bij mij.


4. What is your favorite dish to prepare and why?
I don’t really have a favorite dessert. But I love to give my own twist to traditional desserts: to deconstruct a tiramisu, cannelloni or bojo. Visually it it’s almost unrecognizable, but the taste definitely hits home. I l also like to make use of unconventional ingredients in my desserts.

Wat is je favoriete gerecht om klaar te maken en waarom?
Ik heb niet echt een favorite gerecht: maar ik ben er dol op om traditionele desserts een moderne twist te geven. Visueel ziet het er helemaal anders uit dan normaal, maar als je het proeft is het gerecht meteen herkenbaar. Ook het gebruik van onconventionele ingrediënten in mijn desserts vind ik leuk.



5. What is your favorite dish to eat?

Warm rice with hot pickled herring. Especially if it’s made by me. 


Wat is je favoriete gerecht om te eten? 
Warme rijst met een pittige bokking! Het liefst door mezelf klaargemaakt.


6. What do you think of our Surinamese Cuisine?
Delicious but monotonous. There’s so much more we could do with our local products and vegetables. We shouldn’t be afraid to try new or different things.

Wat vind je van onze Surinaamse keuken?
Heerlijk maar eentonig. Wij kunnen zoveel meer met de producten die wij hier hebben. Wij moeten niet bang zijn om te experimenteren.

7. What could be better?
Don’t be afraid to experiment and try new things. We should learn more about our products. Be more creative with the spices that we already have in our kitchen.

Wat kan beter?
Niet bang zijn om te experimenteren. Meer product kennis opdoen van onze producten. Creatiever omgaan met de kruiden die wij al hebben in onze keuken.


8. Is there a platform needed for chefs?
The Suriname Chef Association is definitely a good start. It’s important for this organization to focus more on the development of our chefs: courses/invitation to international chefs for workshops.

Is een platform voor koks nodig?
De Suriname Chef Associatie is zeker een goede start: belangrijk is dat deze organisatie meer moet focussen op de ontwikkelingen van onze chefs: cursussen/uitnodigen van internationale chefs voor workshops.



9. Do you think the Surinamese cuisine is evolving?
Recently I’ve noticed positive changes and developments. The awareness for the use of Surinamese ingredients in our kitchens is growing.

Vind je dat de Surinaamse keuken zich ontwikkeld?
Recent merk ik positieve veranderingen en ontwikkelingen.
De bewustwording voor het gebruik van Surinaamse ingrediënten wordt groter.


10. What direction should we go with the Surinamese cuisine/kitchen?
We should call more attention to our local cuisine internationally. The great diversity in products, tastes, aromas and colors is what makes our kitchen so special.

Welke richting moeten we naartoe met de Surinaamse keuken? 
Internationaal meer bekendheid geven aan onze keuken. Het benadrukken van de grote diversiteit in producten, smaken, geuren en kleuren. Dit maakt ons zo speciaal.
