In a food processor, combine basil, Parmesan, pine nuts, and garlic. Pulse until finely chopped.
With the processor running, slowly pour in the olive oil until a smooth pesto forms. Season with salt and pepper.
In a pan over medium heat, sauté zucchini noodles until just tender (about 2-3 minutes).
Toss the zucchini noodles with cherry tomatoes and pesto.
Serve warm, and if you like, top with additional Parmesan.
