Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients

  • 2 medium zucchinis spiralized into noodles
  • 1 cup cherry tomatoes halved
  • 1/3 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  • In a food processor, combine basil, Parmesan, pine nuts, and garlic. Pulse until finely chopped.
  • With the processor running, slowly pour in the olive oil until a smooth pesto forms. Season with salt and pepper.
  • In a pan over medium heat, sauté zucchini noodles until just tender (about 2-3 minutes).
  • Toss the zucchini noodles with cherry tomatoes and pesto.
  • Serve warm, and if you like, top with additional Parmesan.
